INGREDIENTS
2 medium eggplant/ brinjal
4 tablespoon refined oil
6 cloves garlic
1 inch ginger
2 red chilli
4 spring onions
2 tablespoon light soya sauce
2 teaspoon sugar
2 tablespoon cooking wine
1 teaspoon vinegar
0 salt as required
How to make Eggplant in Garlic sauce
Step 1
Add the soy sauce, granulated sugar, rice vinegar, cooking wine and 1 tsp of sesame oil in a bowl and mix it well
Step 2
Add some oil in a pan and add the eggplant. Cook until golden brown on top and tender from inside and keep it aside. In the remaining oil, add the chillies and ginger with garlic and saute for a minute.
Step 3
Add the eggplant back to the pan and pour the prepared sauce. Coat all the ingredients well in the sauce, garnish with spring onion greens plus sesame seeds and serve with boiled rice!
