The most important thing to keep in mind while cooking a stir fry is the proportion of the ingredients that go into it because that determines the whole taste of it. Plus, when you are accompanying it with rice or noodles, balancing the taste also becomes a task in making sure that nothing tastes bland. Black bean sauce or fermented black beans are a very strong flavour enhancer and give a tangy-sweet taste to anything that these are added to. In this recipe, we have first marinated the chicken and then cooked it. This process ensures that the chicken not only cooks properly but also retains as much flavour as possible in each bite. Another great thing about this recipe is that it is a super healthy dish to have and you do not have to worry much about the calories while indulging in something so delicious. Cook this yummy stir fry for your next meal and serve with noodles and rice.

INGREDIENTS

250 gm chicken breasts

3 tablespoon corn starch

2 teaspoon light soya sauce

3 tablespoon water

5 tablespoon refined oil

2 inch ginger

1 tablespoon garlic

4 spring onions

1 tablespoon black beans

1/2 cup red bell pepper

1 teaspoon sugar

1 tablespoon cooking wine

0 salt as required

How to make Chicken with Black Bean Sauce

Step 1

Add bite-sized chicken cubed in a bowl and coat them with cornstarch, water, 1 tsp oil and 1 tsp light soy sauce. Keep this aside for 20 minutes and then cook it in hot oil in a wok. Place them on one level and let them food for 2 minutes on each side until golden brown and opaque

Step 2

Add 1 tbsp of oil in a wok and let it heat. Then add ginger and garlic with white or spring onion. Now add either black bean sauce or overnight soaked black beans. Turn the heat to high and then add the other vegetables to the wok. Add the sugar and Chinese cooking wine or pineapple juice, salt and pepper, the chicken and some coriander leaves to garnish. Turn the flame off and serve with noodles or rice.
