Wash the chana dal well and soak it in warm water for about 1 hour. Meanwhile, peel and chop the bottle gourd or ghiya into bite-sized cubes.

Step 2

Take a cooker and add ghee to it. Put on medium flame. Add cumin seeds and let them splutter. Now add chopped onions along with green chillies and ginger paste. Mix and saute for a minute or two.

Step 3

Now add chopped tomatoes along with turmeric, red chilli powder, coriander powder and salt. Cover the cooker with a lid and let the tomatoes cook for 5 minutes. Add a splash of water and again let the tomatoes cook for 2-3 minutes more. Once the tomatoes turn mushy and leave ghee on the sides, they are cooked.

Step 4

Now add ghiya and chana dal to the cooker along with 1/2 cup of water. Put on high flame and after 1 whistle, lower the flame to low-medium. Let it cook for 4 whistles more.

Step 5

Once the steam releases on its own, open the lid of the cooker. Add chopped coriander leaves and garam masala. Give a mix and adjust the salt, if needed.

Step 6

INGREDIENTS

4 cup basmati rice

3 onion

3 tomato

1 tablespoon mustard seeds

1 teaspoon chana dal

2 tablespoon ginger

1/4 cup raw peanuts

14 cup cashews

1/2 teaspoon asafoetida

3 stalks curry leaves

1 teaspoon red chilli powder

1/3 teaspoon turmeric

2 tablespoon ghee

4 tablespoon refined oil

0 salt as required

4 tablespoon coriander leaves

How to make Tomato Pulao

Step 1

Take rice in a big bowl. Wash it properly 3-4 times and then wash once under running water. Now add 8 cups of water to a pot and bring it to a boil. Add rice to the pot and cook until all the water has been absorbed and evaporated.

Step 2

Heat refined oil in a pan. Add mustard seeds, chana dal and chopped ginger. Saute them for a minute. Now add peanuts and stir till it gets cooked. Now add cashew nut, curry leaves and asafoetida. Mix all the ingredients well.

Step 3

Now add chopped onions, stir and saute till golden brown in colour. Now add chopped tomatoes along with salt as per taste. Cook the tomatoes for 6-8 minutes or until mushy.

Step 4

Now add kashmiri red chilli powder, turmeric powder and cook for a minute. Lastly, add desi ghee to give the masala a nice fragrance and taste.

Step 5

Now add boiled rice to the tomato masala along with finely chopped coriander leaves. Mix well, cook for last one minute and switch off the flame.

Step 6

Your lip-smacking Tomato Rice is now ready to be served. Enjoy!

5 raw mango

300 gm jaggery

4 tablespoon mustard oil

1 teaspoon panch phoron

2 bay leaf

1 dry red chili

1/2 teaspoon turmeric

1/2 teaspoon red chilli powder

0 salt as required

How to make Kachhe Aam ki Launji

Step 1

Wash the raw mangoes, peel them and cut into cubes.

Step 2

Pour mustard oil into a pan and put it on heat. Then add 1 teaspoon Panch Phoran. Add 2 bay leaves and 1 dry red chilli. It should be cooked at a smokey temperature for a while to get proper flavour.

Step 3

Add raw mango cubes into the pan. Stir well for at least five minutes so it is sautéed properly. Cover it with a lid and cook for 10 minutes. Remove the lid. By now the mango is half cooked.

Step 4

Add ½ teaspoon turmeric powder, ½ teaspoon red chilli powder and ½ teaspoon salt. Stir it for approx 5 minutes so spices get incorporated. Add crushed jaggery. Mix well, cover it with a lid and let it cook for 5 minutes.

Step 5

Remove the lid now and the texture will be saucy. Your Kacche Aam ki Launji is ready to be served now.

INGREDIENTS

1/2 kilograms bottle gourd

1 litre milk

2 teaspoon ghee

2 green cardamom

2 tablespoon cashews

2 tablespoon almonds

2 tablespoon raisins

1/2 cup sugar

How to make Ghiya Kheer

Step 1

Pour milk into a pot and keep on medium-high heat. Once a boil comes, switch the heat to low.

Step 2

Firstly, peel the bottle gourd and grate it. Squeeze out all the excess water from the ghiya and collect it in a bowl. Now heat ghee in a pan and add the grated ghiya to the pan. Roast for about 5-6 minutes.

Step 3

Add the roasted ghiya to the boiling milk along with sugar and crushed cardamom. Give a mix. Also, add finely sliced almonds and cashews along with raisins. Keep the heat low-medium and stir after every two minutes. Cook until the kheer thickens a bit. It might take anywhere between 10-15 minutes. Don't let the kheer thicken much, as it will thicken further after getting chilled. Switch off the heat immediately after it thickens slightly.

Step 4

Once the kheer thickens a bit, switch off the heat and let it cool down, Now keep the kheer in the fridge for 1-2 hours or until chilled.

Step 5

Once chilled, your Lauki Kheer is now ready to be served.

1 cup mango

1/2 cup milk

1 cup sugar

2 cup coconut powder

How to make Mango Barfi

Add 1 cup chopped mangoes along with 1/2 cup milk to a blender. Blend to form a smooth paste.

Take out the mango paste in a pan and keep it on medium heat. Add sugar and mix till it dissolves completely.

INGREDIENTS

1 cup chickpeas

2 cup water

How to make Chickpea Tofu

Step 1

Wash the chickpeas well and soak them overnight in a bowl of water.

Step 2

The next morning, wash the chickpeas well under running water. Add the soaked chickpeas to a bowl along with 2 cups of water. Blend well in batches to form a smooth mixture.

Step 3

Place a sieve on a bowl and line it with muslin cloth. Pour the chickpeas mixture and strain it. Make a potli with the muslin cloth and squeeze out all the liquid from it.

Step 4

Pour the chickpea water into a pot and keep it on high flame. Once a boil comes, lower the flame to medium. Keep stirring in between to prevent the mixture from sticking at the bottom. Cook for about 20-25 minutes or till it thickens.

Step 5

Let the mixture cool down a bit and then transfer to a glass container. Level it properly and set it aside. it might take 2-3 hours for the tofu to set completely.

Step 6

Once firm, your Chickpea Tofu is ready to be used. Take it out of the container, chop into pieces and use in recipe of your choice.

4 medium potato

100 gm khoya

60 gm peas

60 gm cashews

30 gm paneer

5 gm cumin powder

30 gm sesame seeds

5 gm red chilli powder

5 gm garam masala powder

300 ml vegetable oil

How to make Bharwan Aloo Tilnaaz

Step 1

Take 4 oval potatoes, peel them and slice the upper layer. Then scoop out from thecentre and deep fry in hot oil until it becomes golden yellow in colour.

Step 2

To make stuffing for potatoes – take a pan, add some ghee and let it heat. Now add khoya, cottage cheese, green peas, crushed cashew nuts, salt, red chilli powder, cumin powder and garam masala. Give a good mix. Cook for about 4-5 minutes. Your stuffing is now ready.

Step 3

Stuff the potatoes with the mixture, halve them, and put into the hot tandoor for 10 minutes. Now smear them a bit with ghee and roll them in toasted sesame seeds.

Step 4

Serve the Bharwan Aloo Tilnaaz with mint chutney or tomato ketchup.
