INGREDIENTS
250 gm chicken boneless
2 teaspoon schezuan peppers
2 tablespoon corn starch
1 cup refined oil
1 tablespoon ginger
1 tablespoon garlic
5 dry red chili
2 teaspoon vinegar
1 tablespoon chilli garlic paste
1 tablespoon light soya sauce
2 teaspoon sesame oil
1 teaspoon sesame seeds
How to make Szechuan Chicken
Step 1
Take chicken pieces and add them to a bowl. Now coat them with oil, corn starch, salt and Szechuan pepper. Coat well and keep aside. Take oil in a pan for frying. Shake off the excess cornstarch from chicken and fry it in batches until golden and crisp. Take out and put on a paper towel to drain excess oil.
Step 2
Heat 2 tbsp of oil in a pan and add ginger and garlic to it. Once this turns fragrant, add chillies and bell pepper and roast for 3-4 minutes on high heat. Take another pan and add all the sauces into it, make a cornstarch slurry by mixing 2 tsp cornstarch with 2 tsp water, add into the pan and let it thicken.
Step 3
Add the vegetables and the fried chicken to the sauce mix, coat well and serve with rice or noodles.
