The art of stir-frying has originally come from China and has made a place for itself in the whole world. Many dishes are now inspired versions of famous stir-fries. Today, we have for you one of the most delicious and original stir fry recipes called Szechuan Chicken. This recipe is not just super easy to cook but is also so delicious that you will not be able to stop yourself from having more. And the good news is, you can have it without guilt if you prepare it without frying the chicken. You can also shallow fry or slightly toss the chicken in some oil and then cook it in the sauces. Szechuan Chicken tastes best when served with steamed rice or noodles. It offers a perfect balance of flavours. The dish is originally supposed to be spicy and if you love spicy, this recipe is for you. But if you can’t tolerate too much spice, you can also choose to leave out red chillies. INGREDIENTS

250 gm chicken boneless

2 teaspoon schezuan peppers

2 tablespoon corn starch

1 cup refined oil

1 tablespoon ginger

1 tablespoon garlic

5 dry red chili

2 teaspoon vinegar

1 tablespoon chilli garlic paste

1 tablespoon light soya sauce

2 teaspoon sesame oil

1 teaspoon sesame seeds

How to make Szechuan Chicken

Step 1

Take chicken pieces and add them to a bowl. Now coat them with oil, corn starch, salt and Szechuan pepper. Coat well and keep aside. Take oil in a pan for frying. Shake off the excess cornstarch from chicken and fry it in batches until golden and crisp. Take out and put on a paper towel to drain excess oil.

Step 2

Heat 2 tbsp of oil in a pan and add ginger and garlic to it. Once this turns fragrant, add chillies and bell pepper and roast for 3-4 minutes on high heat. Take another pan and add all the sauces into it, make a cornstarch slurry by mixing 2 tsp cornstarch with 2 tsp water, add into the pan and let it thicken.

Step 3

Add the vegetables and the fried chicken to the sauce mix, coat well and serve with rice or noodles.
