INGREDIENTS

250 gm chicken

5 cloves garlic

1 inch ginger

10 sprigs coriander leaves

1 green chilli

2 teaspoon corn flour

0 black pepper as required

0 salt as required

1 teaspoon vinegar

1 tablespoon water

How to make Chicken Lemon Coriander Soup

Step 1

Add all the chicken in a pot and fill the pot with water up to a level where it covers the chicken. Add 1 tbsp of salt, ½ inch ginger and a few coriander leaves. Let this boil for 15 minutes

Step 2

Take the chicken out of the pot and let it cool down. Once it cools down, start shredding the chicken using either fork or knife. Meanwhile, add some butter in a pan and add chopped garlic and ginger to it. along with green chilli slit in half.

Step 3

Once the ginger and garlic cook nicely, add in 1 cup of chicken stock and about 2 cups of water along with the shredded chicken and bring this to a boil. Season it with salt and pepper and add vinegar. To this, add a cornflour slurry and coriander leaves along with the juice of 2 lemons. Serve hot with some toasted bread!
