Moringa Subzi with Laccha Paratha

INGREDIENTS

2 cup wheat flour

4 teaspoon ghee

1 cup milk

2 cup drumstick leaves

1/4 teaspoon mustard seeds

1/4 teaspoon cumin seeds

2 tomato

1 teaspoon ginger

1/4 teaspoon turmeric

0 salt as required

How to make Moringa Subzi with Laccha Paratha

Step 1

Take 2 cups wheat flour, 1 teaspoon ghee and salt as per taste in a mixing bowl. Mix well, add water as per need and knead to a smooth dough. Set aside for 30 minutes.

Step 2

At the time of making paratha, divide the dough into 4 equal balls. Take one ball and roll into a 6″ thin disc. Apply a few drops of ghee and spread evenly, sprinkle some wheat flour. Pleat the dough from the opposite side. Roll the pleated dough into a circle and roll into thin disc again.

Step 3

Place the rolled disc on a hot tawa and cook from both sides with some ghee.

Step 4

For the moringa sabzi, first wash the drumstick leaves (moringa) and drain the water and pat the leaves dry.

Step 5

In a heavy-bottomed pan, add 2 tsp ghee and wait for it to heat up. Once the oil is hot add mustard seeds and cumin seeds and let it crackle on medium heat.

Step 6

Now add in the chopped ginger and sauté for a few minutes until become soft. Add in the drumstick leaves, turmeric powder and stir the subzi well. Add salt for taste along with chopped tomato,

Step 7

When the leaves have shrunk, it means that the leaves are cooked. Turn off the flame now.

Step 8

Pair up this Moringa Subzi with Laccha Paratha and serve. Enjoy!
