Once a bhurji is prepared, you just need to stuff it in bread slices layered with butter and mint chutney. These Anda Bhurji Sandwiches are best paired up with tomato ketchup. You can either toast the slices or use them raw. These protein-rich sandwiches can easily fit in your weight loss diet as well. INGREDIENTS

2 egg

1 onion

1 tomato

1 capsicum (green pepper)

1 green chilli

2 tablespoon coriander leaves

1/2 teaspoon cumin seeds

1/4 teaspoon asafoetida

1/4 teaspoon turmeric

1/2 teaspoon red chilli powder

1/2 teaspoon coriander powder

1/4 teaspoon garam masala powder

0 salt as required

1 tablespoon virgin olive oil

1 tablespoon butter

1 tablespoon green chutney

2 bread slices

How to make Egg Bhurji Sandwich

Step 1

Crack open the eggs in a bowl. Add a little bit of salt and whisk well.

Step 2

Heat oil in a pan. Add asafoetida, cumin seeds and let them splutter for a few seconds. Now add chopped onion and green chilli. Saute for a minute. Now add chopped tomato and capsicum. Mix and saute for 4-5 minutes.

Step 3

Add turmeric, red chilli powder, coriander powder, garam masala and salt. Mix well.

Step 4

Now add whisked eggs to the pan and quickly use a spatula to mix and scramble the eggs. Adjust the salt as per taste and cook the scrambled eggs until done. Finally, garnish with chopped coriander leaves and your Anda Bhurji is now ready to be stuffed in sandwiches.

Step 5

Take a bread slice and spread butter on it. Spread mint chutney on another slice. Now stuff some of the Anda Bhurji in the slices to make a sandwich. If you wish, you can also grill the slices.

Step 6

Your Egg Bhurji is now ready to be served. Enjoy!
